INGREDIENTS
1 cup cake flour sifted
1-1/2 cup white sugar sifted
12 egg whites
1 teaspoon cream of tartar
1/4 teaspoon salt
1-1/2 teaspoon vanilla extract
1-1/2 teaspoons fresh lemon juice
1/2 teaspoon almond extract
Fresh fruit *optional
Whipped cream *optional
DIRECTIONS
Preheat oven to 325 degrees Fahrenheit. While the oven is heating grease down your angel food cake mold.
In a mixer bowl add egg whites and use a whisk to beat until egg whites are frothy and almost doubled in size.
Once frothy add in cream of tartar and salt. Whisk until fully incorporated.
At medium speed, slowly add ONLY 3/4 cup of your white sugar. Add vanilla extract, lemon juice, and almond extract once the eggs are nice and shiny and create soft peaks. Whisk in until incorporated.
Take the sugar egg mixture off of the mixer stand and SLOWLY add in all flour and the rest of the sugar, then fold in. You can do half of the ingredients and then fold in the rest if needed.
Gently add in batter to greased mold and bake on the lower part of your oven for 50-60 minutes or until a light golden brown. The top should spring up when touched.
Let cool down and add fruit with or without whipped cream on the side then ENJOY.
