Balsamic Mushroom Chicken
Serves: 5 people
Prep Time: 10 minutes
Cook Time: 20 minutes
INGREDIENTS
5 chicken thighs boneless
1/2 large white onion chopped
2 cups of mushrooms
1/4 cup chicken broth
1/4 cup white wine
1 cup heavy whipping cream
5 tablespoons butter
1/2 cup parmesan cheese
3 tablespoons balsamic vinegar
salt & pepper
DIRECTIONS
Grab your skillet pan and heat half of your butter. Once heated up add half your mushrooms and all of the chopped onions. Sauté until onions are transparent. Set aside to keep warm
Grab another skillet and heat the rest of your butter. While heating season the chicken with salt and pepper on both sides then sear your chicken in a buttered pan. Once chicken is half cooked set aside on a plate.
Take the chicken broth and wine and add to your chicken pan to deglaze. Once deglazed, add in your heavy cream and vinegar. Once the heavy cream is simmering add the rest of your raw mushrooms and let simmer for a few minutes.
Add the chicken to the pan and cook until the chicken is done for about 10-15 minutes. In the last few minutes of cooking add the parmesan and slowly stir until melted
Once everything is cooked; place chicken on the plate with some sauce and top off with the onion mushroom mixture you created earlier.
