One Pot Carnitas

Serves: 10-15 people

Prep Time: 10 minutes

Cook Time: 2-3 hours

INGREDIENTS

  • 1.5 lbs of pork tenderloin or pork shoulder

  • 5 garlic cloves diced

  • 1/4 cup dark brown sugar packed in

  • 1 tablespoon chili powder

  • 2 teaspoons paprika

  • 1 teaspoon cumin

  • 1-1/5 teaspoon dried oregano

  • 1 teaspoon salt

  • 1 yellow onion quartered

  • 1 cinnamon stick

  • 2 oranges halved

  • 2 limes halved

  • 1 lemon halved

DIRECTIONS

  1. Preheat over to 325 degrees Fahrenheit.

  2. In the Dutch oven place all ingredients in the Dutch oven. For the oranges, limes, and lemon; squeeze out the juice then place the halves back in the Dutch oven.

  3. Cook for 2 to 3 hours. Check on the meat every hour to see if it is drying out; if so add 1 cup of water or broth to the Dutch oven until fully cooked.

  4. Once cooked rest for 10 to 15 minutes then shred away for eating!
