One Pot Carnitas

Cook Time: 2-3 hours
INGREDIENTS
1.5 lbs of pork tenderloin or pork shoulder
5 garlic cloves diced
1/4 cup dark brown sugar packed in
1 tablespoon chili powder
2 teaspoons paprika
1 teaspoon cumin
1-1/5 teaspoon dried oregano
1 teaspoon salt
1 yellow onion quartered
1 cinnamon stick
2 oranges halved
2 limes halved
1 lemon halved
DIRECTIONS
Preheat over to 325 degrees Fahrenheit.
In the Dutch oven place all ingredients in the Dutch oven. For the oranges, limes, and lemon; squeeze out the juice then place the halves back in the Dutch oven.
Cook for 2 to 3 hours. Check on the meat every hour to see if it is drying out; if so add 1 cup of water or broth to the Dutch oven until fully cooked.
Once cooked rest for 10 to 15 minutes then shred away for eating!
