INGREDIENTS
Carnitas (click here for link)
or any other shredded meat
15-20 corn tortillas
2-1/2 cups Mexican cheese or sharp cheddar cheese
Possible Sides
Sour cream
Guacamole
Pico de gallo
Jalapenos
Shredded lettuce
DIRECTIONS
Preheat over to 450 degrees Fahrenheit and grab a baking sheet.
Warm tortillas in the microwave and then cover with olive oil when warmed.
Grab a tortilla and add a large spoonful of the meat and some cheese. Roll up the meat tortilla and place it on the baking sheet with seam side down.
Once your baking sheet is full; place it in the oven and cook for 6 minutes then turn the oven tortillas and cook for another 8 minutes.
Once fully cooked and crispy remove from the oven and let cool for about 5 minutes. Once slightly cooled add any sides you would like and ENJOY!
