INGREDIENTS
1 soup base recipe - click here
4 potatoes cut into 1/2 inch
2 tomatoes chopped
1/4 teaspoon salt
1 zucchini cut into 1/4 inch
1 squash cut into 1/4 inch
1 cup corn
1/4 cup fresh green beans with ends cut off
1/2 cup cooked macaroni or ditalini
1/4 cup fresh parsley minced
1/4 cup basil minced
Salt and Pepper to taste
DIRECTIONS
Bring soup base to a simmer then add in potatoes, salt and simmer for about 30 minutes until potatoes are cooked through.
Add in squashes, corn, beans, and simmer for about 5 minutes.
Add in pasta, parsley and basil. Taste test to see if more salt or pepper is needed.
Let cool slightly and enjoy!
