INGREDIENTS
4 pieces of chicken either breast or thighs
1/2 cup Dijon mustard
1 tablespoon fresh thyme chopped
2 tablespoons butter
1 cup chicken stock
1/4 cup heavy cream
1 cup fresh mushrooms sliced
DIRECTIONS
In a large bowl mix together Dijon mustard and thyme then add chicken to mixture and fully cover and refrigerate for 1 hour to 24 hours.
Bring chicken to room temperature and heat a skillet with butter. Once nice and hot add in chicken and cook until fully done, about 10 minutes per side. Be careful not to burn so lower temperature when cooking.
Set cooked chicken aside and pour stock in the skillet to get all the good bits up from the pan.
Reduce the stock by half and add in mushrooms, once mushroom are cooked half way add in cream and bring to simmer.
Add back in the chicken to reheat and let everything cook together until mushrooms are fully cooked.
