Ricotta Potato Side Dish

INGREDIENTS

  • 3lbs small red potatoes thinly sliced and boiled for 3 minutes once sliced

  • 1-1/2 cup ricotta cheese

  • 1 cup minced parsley

  • 2 eggs

  • 1-1-/2 cup heavy cream

  • 3 cups Gruyere cheese grated

  • 1 tablespoon ground nutmeg

  • Salt and Pepper to taste

DIRECTIONS

  1. Preheat over to 375 degrees Fahrenheit.

  2. Mix ricotta, parsley, salt, pepper, and nutmeg.

  3. Whisk eggs and cream together then season with salt and pepper.

  4. Butter a 9”x13” pan then start layering potatoes, ricotta mixture, and then cheese. Repeat that process until the ingredients are done or the pan is filled.

  5. Pour cream mixture over potatoes.

  6. Bake for 40-45 minutes or until potatoes are tender.

The roasted edges are the best parts, so dig in first
