INGREDIENTS
1lb-2lb full mushrooms - stems (diced) and tops separated
1/2lb ground beef
1/2lb chorizo
2 shallots diced
3 garlic cloves diced
1 cup parmesan
1/2 cup bread crumbs
olive oil
Salt and Pepper to taste
DIRECTIONS
Preheat over to 400 degrees Fahrenheit.
Place oil in a sauté pan and heat up. Once heated up, sauté mushroom stems, shallots, and garlic. Once onions are translucent set aside in a bowl.
In the same pan add ground beef and chorizo and cook fully.
Once meat is fully cooked add back in the shallot mixture and transfer to a bowl. Mix in panko and cheese. Fully mix until everything is incorporated.
Oil up the mushroom tops and place the mushrooms on the baking sheet or baking dish.
Spoon in meat mixture and press down into mushrooms. Once all the mushrooms are stuffed place in the oven.
Bake for 25-30 minutes or until mushrooms are tender.
Let cool down for about 5-10 minutes then ENJOY!
If you have extra cheese left over feel free to top the mushrooms for some extra cheesy fun.
