Serves: 10-12 people

Prep Time: 15 minutes

Cook Time: 25-30 minutes

INGREDIENTS

  • 1 bundle of Asparagus

  • Juice of half a lemon and zest

  • Pomegranate Seeds

  • Crumbled Feta

  • Olive Oil

  • Salt and Pepper to taste

DIRECTIONS

  1. Preheat over to 400 degrees Fahrenheit.

  2. Place asparagus in a bowl and drizzle on olive oil.

  3. Add lemon juice, salt, and pepper to the asparagus then place on a baking sheet and cook for 30-45 minutes or until fully cooked through.

  4. Once asparagus is cooked let it cool for about 5 minutes. Once cooled add to plate.

  5. Top asparagus with pomegranate seeds, lemon zest, and feta.

  6. ENJOY!

Using juice and zest from an orange works just as well and gives another fresh taste.
