Easy to make brioche buns with blackened sesame Seeds

Serves: 10-12 people

Prep Time: 25 minutes plus 24 hour proofing

Cook Time: 30-35 minutes

INGREDIENTS

  • 5 cups all-purpose flour

  • 1 tablespoon dry yeast

  • 3 tablespoons white sugar

  • 1 tablespoon salt

  • 1/2 cup cold water

  • 6 eggs ( 5 for batter and 1 for egg wash)

  • 1-1/2 cup butter cut into 1 inch pieces

  • 1/4 cup blackened sesame seeds

DIRECTIONS

  1. In a bowl with dough hook mix together flour, yeast, salt, and water. Slowly mix in 5 eggs on low speed for 3-4 minutes.

  2. Knead by hand for 3 minutes and place back into the bowl with a dough hook.

  3. On medium speed, slowly add in butter and only add a new piece once the original piece is fully incorporated - THIS TAKES TIME.

  4. Transfer dough to an oiled up bowl and set aside to proof overnight in the fridge.

  5. After a proof set at room temperature for 30 minutes, knead on a floured surface, roll out dinner rolls, and let proof again for 1 hour in the baking dish

  6. Preheat oven to 350 degrees Fahrenheit.

  7. Make egg wash (1 egg with 1 tablespoon water mixed) and brush on top of rolls then sprinkle sesame seeds on top.

  8. Bake for 30-35 minutes or until golden brown,

  9. Allow the bread to cool down for a few minutes then ENJOY!
