OATMEAL ORANGE LACE COOKIE BOWLS

Crunchy melt-in-your-mouth cookies filled with orange zest and shaped to make the perfect ice cream treat bowls.

These cookies are meant to impress and trust me they do. Lace cookies are brittle cookies that have an amazing crunch. However, even with the crunch they melt in your mouth due to the butter and sugar ratios. They are such great head turners and work great for summer ice cream sundaes.

WHAT ARE LACE COOKIES?

They are fragile cookies that you “drop” the batter onto your baking sheet and as they bake they open-up and look like a transparent lace when finished. Think of it as a see-through wafer.

I tried for days to figure out where these cookies originate from, but each country has different techniques and certain sets of ingredients when making them. I couldn’t figure out exactly where they came from. This is just how I make them.

Makes: 2 dozen cookies

Prep Time: 5-10 minutes

Cook Time: 6 minutes

INGREDIENTS

  • 1/2 cup light corn syrup

  • 8 tablespoons butter

  • 3/4 cup brown sugar

  • 1 teaspoon orange zest

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 6 tablespoons all purpose flour

  • 1 cup quick cooking oats

  • 1 tablespoon heavy cream

DIRECTIONS

  1. Pre-heat oven to 350 degrees Fahrenheit.

  2. On the stove bring butter, sugar, and corn syrup to a boil. Once boiling take off of the stove and add extract, zest, oats, flour, and cream.

  3. Mix until smooth.

  4. Drop a rounded tablespoon on top baking sheet so that the cookies are about 3 inches wide. You can just pop it into your oven until the cookies bubble then, remove it from the stove and set aside.

  5. Let rest and ENJOY

    TIP: About 1 minute out of oven use the bottom of a bowl to mold warm cookie to make oat lace cookie cup for ice cream

TIP: IF YOUR COOKIE IS TOO BRITTLE AND IS BREAKING WHEN SHAPING THEN PLACE THE COOKIE SHEET BACK INTO THE OVEN FOR 1 MINTUE TO “RE-HEAT” FOR SHAPING
