Skillet Cobbler
Comfort and convenience in one dish, skillet cobbler. This dish celebrates the simple joys of home-baked goodness with the aroma of bubbling fruit that fills the air.
SKILLET COBBLER

INGREDIENTS
1-1/2 cup all-purpose flour
1/3 cup granulated sugar
1-1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup buttermilk
3/4 cup water at room temperature
4 Tablespoon melted butter
INGREDIENTS FOR FRUIT FILLING
6 cups of any frozen fruit you prefer
1/2 cup granulated sugar
3 tablespoons cornstarch
1 teaspoon vanilla extract
1 teaspoon lemon juice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
DIRECTIONS
Preheat oven to 400 degrees Fahrenheit.
In a large bowl mix together the first set of ingredients; flour, sugar, baking soda salt, buttermilk, water, and melted butter. This will be a sticky dough-like consistency. Once mixed set aside.
In another bowl mix the second set of ingredients; fruit, sugar, cornstarch, vanilla, lemon, cinnamon, nutmeg, and salt. Make sure to mix this well as to get everything incorporated together.
Grab your fruit mixture and place it into your cast iron skillet.
Grab your dough topping and spoon over your fruit. Remember you don’t need to cover every part of the top, you are trying to make it look like biscuits on top of the fruit.
Place in over for 30-35 minutes or until golden brown.
Let this cool down before eating but enjoy it with some ice cream or even honey on top
